REGISTRATION DEADLINE: Thursday, May 7
The above-referenced page says you can register by midnight on May 7, 2020, as quoted below, but it is not certain which time zone the Polish embassy will go by. Before the last parliamentary elections, the voter registration website was closed apparently based on the Warsaw time and the Consular Division of the Polish Embassy in Washington started rejecting email registrations after 5 PM Washington time of the last day (“following orders from above”). So register early.

(By the way, democracy advocates and lawyers from Poland urge everyone to register even if you plan on boycotting the election because only a registered voter can file a protest later.)
