Almond Rhubarb Coffee Cake



2 1/2 c. packed brown sugar
2/3 c. veg. oil
1 egg
1 tsp. almond extract or vanilla
2 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
1 c. milk
1 1/2 c. chopped rhubarb
3/4 c. sliced almonds
1/2 c. sugar
1 T. melted butter

Preheat oven to 350˚. Grease 2, 9 in. round pans.
In large bowl beat brown sugar, oil, egg & vanilla or almond. Combine flour, salt & baking soda. Add to sugar mixture, alternate – milk. Beat until smooth. Stir in rhubarb & 1/2 c. almonds, pour into prepared pans. In small bowl combine white sugar & butter. Stir in 1/4 c. almonds. Sprinkle topping into batter. Bake 30-35 min. or until the cake tests done. \
Makes about 20 servings.
