Lemon Raisin Bars

LEMON RAISIN BARS

INGREDIENTS:

2 c. raisins
1 can (14 oz.) sweetened condensed milk
1 T. grated fresh lemon zest
1 T. fresh lemon juice
16 T. (2 sticks) butter room temperature
1 1/2 c. light brown sugar
1 1/2 tsp. pure vanilla extract
1 c. all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. old fashioned oats
1 c. chopped walnuts

Preheat oven 350˚. Grease a 9 x 13 baking pan.
In medium saucepan combine the raisins, milk, lemon zest & lemon juice. Cook over medium heat stirring until bubbly. Remove from heat. Let cool slightly.
In large bowl beat the butter, brown sugar & vanilla until well blended. Stir in the flour, baking soda & salt, then oats & walnuts.
Press all but 2 cups batter into prepared pan. Spread the raisin mixture on top within half inch of edge. Top the raisin mixture with dollop of reserved batter & press down.
Bake for 25-30 minutes or until golden. Let cool. Cut into bars.
Makes about 12 bars.
